The client wanted to convert an empty commercial space into a dark kitchen to let the unit to rotating F&B tenants. We knocked through an unused storeroom and re-planned a very tight footprint into a dark kitchen with a clear prep, cook, wash flow, robust extraction, and easy change-over. The space started as an empty shell; we delivered a full commercial fit-out from scratch.
The fit-out provides:
- Chilled and frozen under-counter storage plus an upright fridge
- Flexible hot line: combi oven, countertop griddle, single-tank fryer, four-zone electric hob
- Microwave station with suitable stand/heat shielding
- Front-loading dishwasher with pass-through dish table
- Separate prep, pot-wash, and hand-wash sinks
- Dedicated water heater and clear service routes
- Wall shelving, standing racks, and a slim commercial waste system
- Full extraction with make-up air and basic pest-control
- Hygiene-led finishes for straightforward operator changeovers
